In BG3, I'm playing a drow half-elf. My plan is to dual wield scimitars or rapiers, using the Thief subclass to get an extra bonus action, and the Fighter's first level to gain the Two Weapon Fighting style so I can apply my dex bonus to my offhand attack. Dual wield builds thrive on anything you get which adds a static amount of damage to each weapon attack. For instance there's a ring available in act 1 which adds 2 acid damage to each attack. Stacking these effects is how dual wield builds can compete with 2-handed builds sometimes. Rangers and fighters are both excellent multiclass options. Obviously go two weapon fighting with your fighter levels, then grab dual-wield feat. Pump STR with the rest of your ASIs and call it a day. It's a boring build, but it'd be pretty good, I think.
