You can use weapon art or grease buffs to buff both by 2 handing and buffing the left hand one first and then 1hing and buffing the right but pretty sure you can't use a seal to buff both. You can't, but all katanas already do 50+ bleed so you should still get it quite a few times with 1 bloodflame.
