Yes joyboy did defeat Kaido cause yes luffy did defeat Kaido. Defeating someone is not the same as being stronger than them. Yes the battle ended in a 1v1. Kaido knew the situation and all the context that came with it but he still accepted the battle and believed he could beat luffy regardless. He was wrong.
